This is my favorite salad dressing recipe. It is very popular with everyone who tastes it and very convenient because, when serving larger amounts of salad, you can just toss the dressing with the salad, avoiding the whole messy, drippy act of salad dressing self service.
So here it is…my very own creation (hey, I’ll gladly take credit when credit is due 😉
1/4 c extra virgin olive oil
1/3 c lime juice (better than lemon, I tell ya!!)
1/4 c grade b maple syrup (better than a, I tell ya!!)
3/4 tspn salt
1 tspn yellow hing (better than white, I tell ya!!)
1/8 tspn coarsely ground black pepper
1/2 tspn Italian seasoning (or some sort of dried Italian herb combo like basil and oregano)
*fresh basil/herbs work nicely, too
*to make it creamy, you may add a tablespoon of tofu, parmesan or romano cheese, cream cheese/sour cream/buttermilk or vegenaise/nayonaisse…blend in blender.
Generally I make a double batch, put it in a mason jar and shake. You can keep it hanging around your fridge for a surprising amount of time. Don’t want to tell you how long….remember…..it’s a surprise!
