One late nite making Black Raspberry Jam left me slightly hungry and prone to searching through the fridge. Well, there wasn’t much inside other than raw ingredients. Since peanut butter with sucanat seemed a little heavy for a midnite snack, I chose a leftover paratha filled with the conserve. For those of you who’ve never had a paratha before, peanut butter seems like diet food in comparison. But it was late, so late in fact that paratha with conserve seemed the equivalent to munching on carrot sticks.
But who cares!!! I’m telling you, it was good. The only thing missing was sour cream. I don’t know why I decided that, but the combo really was begging for it. Or maybe that was my tongue. Nevertheless, it was so good that I even saved some for my husband to sample at breakfast.
Of course, when he ate it, he was well rested and not at all delirious, so his positive reaction wasn’t nearly as over the top as mine was. But even he gave these two unlikely plate mates a thumbs up.
