The Best Strawberry Jam. And It’s Not Even Jam.

The best strawberry jam is a conserve!
This weekend I got working on the strawberries. Liz had brought me some organic rhubarb from her CSA so I was able to make a small batch of organic Strawberry Rhubarb Conserve. It tastes great–full of strawberry flavor with a tart punch.

But the Strawberry Conserve is just too good. Technically, it is not a jam because the sugar content is much, much lower. And because the sugar content is so low and the strawberries were so fresh, what you get is a full fruit experience. Honestly, there is so much fruit in the jar.

The strawberries are blended and the consistency of the conserve is somewhere between a jam and a fruit butter. I think the best way to describe it is spreadable sorbet that doesn’t melt at room temperature. So eat as many fresh strawberries as you can get now. And when you miss the taste of all that juicy fruit, just reach for a jar of Sabjimata Strawberry Conserve. So good.
